The grapes, particularly pinotage and shiraz, strolled in on African time in 2004, sighs Norfolk-born Stephen Richardson. Ready to receive the dribs and drabs were visitors from the UK, who were ‘inadvertently and innocently commandeered to help with the late night punch-downs’, leaving Richardson to hold their cameras. The winemaker has started to ferment his reds in smaller batches in open bins to increase extraction. He’s installed new tanks, and his next projects are a maturation store for bottled and cased wine, and, after a lengthy delay sourcing suitable vines, a new block of tempranillo.
