Elegant, soft, well-structured wines which age well are Sakkie Kotzé’s goal at this historic estate, granted by Lord Charles Somerset in the late 18th century to Jacob de Villiers, descendent of one of the original French Huguenots. Fruit selection and careful handling are the winemaker’s mantras. Bunches are hand-picked and -sorted, and only ones which pass ‘exacting scrutiny’ are fermented. ‘The slightest bruise and they fail the test,’ Kotzé insists. His reason is simple: ‘If some of the best French châteaux take the trouble to select their grapes, so can we.’
